Pullulan is natural water-soluble polysaccharide, produced from corn starch by fermentation. Available as a white powder it is odorless, flavorless, innoxious, edible and highly stable. Pullulan consists of maltotriose units linked through alpha 1,6-glucosidic bonds.
Pullulan can be widely used in pharmacy food, makeups, agriculture chemical,chemical engineering and many other fields. On May 19th, 2006, the ministry of Health of the People's Republic of China issued No.8 post, declaring that pullulan, a newly added food additive, can be used in candy and chocolate coat, films, complex flavoring and fruit and vegetable juice as the film former and thickening agent.
In Japan, pullulan is classified as the unlimited usage additive like starch, which can be add unlimitedly in food, medicine and make ups.
