Every one asked me that how different are salted fish and dried fish? Because of partner, they mistake salted fish like dried fish or opposite.
Before answer, I may mention different among dried fish in Asia and dried fish in Europe. In other words,that is diferrent use to usage English between the Orient and the Western people.
On April, 2005, I had came Busan after I left Samsambo sea (the South of Korean tourist landscape), our company's customer is Mr.Ducky Hee Sohn, that lead I pass a open-air market beside Busan sea, before dinner. At here,Mr.Sohn gave me to see and explain well of product Cattle fish of half dried and half frozen.It is like cuttlefish in Vung Tau, that is processing to export to China. Moisture about 30 - 35%, the weak as Vietnam usually call but drier than blue anchovy of Taiwan. At 3 cold-storages Mr.Sohn is inventory 5.5 tons. This much from late 2004, product is selling very slow. So he had to retail for kiosks at Busan according goods consign first, payment slowly. He told that this was his fail for new product develop, failed in marketing after he researched this product in Italian market. He advised me "You 're young man and keep out my faulty of new launch dried fish in Korea".Of course I had to "say yes", because Mr.Sohn bigger than me 10 years and senior of retail at Busan rather a long time. But I think defferent than little because of: After I attended World Food Moscow Sep 2005, I take notice that few customer Moldova, Kazactan, Estonia, Nga use word dried fish to talk with me.They only talk simple Anchovy - or yellow tail scad, big eye herring or yellow strip travelly. Instead of they talk seasoned fish they used word salted fish for brief than to talk both dried fish and seasoned fish.
Chinese, Taiwanese, Korean and Japanese to Vietnam usually use "dried" while they buy dried fish. This is may characteristic Asian to speak English. "dried" used great in all anchovy products and seasoned fish.

And may they think that dried fish moisture is too dry, fish become hard while salted fish moisture can 20% of anchovy, yellow strip travelly(in Russia) but can 28% - 35% of salmon, eel, saith (in German) of squid (in Italia, Spain).
This much, different between dried andsalted fish is moisture, seasoned and according to time use product of each market, each civilian, each consumer. At here, the same is a like dried fish product but each market request different. Almost all Jappanese, Korean, Taiwanese and China of Manchu eat flat taste - 0.3% salt in dried.
